Simple Wine Glossary
- Champagne &Bubbles Essentially sparkling wine from a certain region. Champagne - the traditional home on the edge of Paris. Only wine from this area may be called Champagne. Wine made in the same way from other regions adopt their own name. Italy and Spain have their own style of sparkling, generally much sweeter, Asti and Cava respectably. In NZ and Australia we generally follow the french style and make Methode Traditionnelle.
- Sauvignon Blanc This is NZ's greatest wine export, producing zesty and explosively pungent wines. Most typically from Marlborough. Other regions, older wines and different styles, like slightly oaked versions are better suited to food and have a rounder more fuller palate.
- Pinot Gris The mover and shaker in the domestic wine scene. Light, florally and almost always easily approachable, traditionally (Alsace) big, perfumed and alcoholic, the local style is far more restrained.
- Chardonnay Ranging from no oak and low alcohol (12%) to fully oak fermented and aged, 100% Malo and 14%, big luscious and buttery, Chardonnay is the Lord of the white wines. Originating in Chablis with some of the worlds best examples, - a food lovers wine. A bigger rounder palate than any of the aromatics.
- Riesling Traditionally Germanic from the edges of the River Rhine, at its best acidic, fruity and alcoholic. More recently Riesling or dry Riesling, differing very very little as a variety a sweet punchy style not suited to those who want a "Dry" wine.
- Aromatics All the western staple white wines could fall into this bracket other than Chardonnay. Exactly as it says, highly aromatic and approachable, usually heavily fruit driven, medium to sweet and stunning with salads, rich jus and desserts. Typically Viognier, Gewurztraminer, Pinot Gris and Riesling, a very Germanic style of wine, although not all originating from there.
- Cabernet & friends Essentially varieties that can be grown in Bordeaux (Fr), Cabernet, Merlot, Franc, Malbec etc. Big dark and robust with a strong balance of fruit and alcohol. Plums, raspberries and leather.
- Pinot Noir Burgundy's famous red. Savoury, rich and ripe without the blockbusting tannins of Cabernets and Syrah. A perfect match with Game foods and red meats, equally approachable with lighter meals.
- Syrah & Friends Syrah & Shiraz (Australia) are the same variety but a great example of what the different terroir of climate may do to the same fruit. Rich, luscious, jammy and alcoholic ranging to more subtle and savoury characters in NZ and France (Rhone).
- Dessert Wines Fruit that is one way or another dehydrated to some degree leaving very little moisture and intense concentrated sugars. Fermented and bottled leaving incredibly rich, sweet and viscous wines that work equally well with cheese and dessert. At their best (Ch d Y'quem) & Mystery Creek Obsession, are like drinking nectar.
- Fortified Wines Most famously Port (Portugal) & Sherry (Jerez, Spain) big sweet and alcoholic, anywhere upwards of 18% Alc and age is almost undefined, a perfect after dinner sip. Advisory to consume sensibly.
- Assume all spirits are available and a cocktail list is at the bar and available on request. Served as doubles.
- Please note, menus and pricing are subject to change without notice and vary depending on seasonal availability.
